Salmon Donburi

Ingredients

Vegetable oil, for shallow frying

700g salmon, skinless and each portion cut into 4

1 cup rice flour

Steamed sushi rice, to serve

2 bunch broccolini, steamed to serve

Shichimi Togarashi or sesame seeds, to garnish

Pickled ginger, to serve

Sauce

3 tbsp soy sauce

2 tbsp sake

2 tbsp mirin

2 tbsp caster sugar

Method

Combine the sauce ingredients in a pan over a medium heat. Add cornflour and water slurry little by little to thicken the sauce.

Toss the salmon in the rice flour. Heat oil in a pan and in batches fry off the salmon then drain on a paper towel. Add the sauce to the pan and bring to the boil to thicken. Carefully return the fish to coat.

Serve with rice, steamed broccolini and shichimi togarashi or toasted sesame seeds and pickled ginger.
