Salad burnett (Sanguisorba minor)

Latin name: Sanguisorba minor
Plant Family: Rose (Rosaceae)
Lifespan: Perennial
Origin: Europe
Growing: Can tolerate most soil types as long as it has good sun exposure. It self seeds itself prolifically.
Edible uses: This is one of our favorite salad greens and provides food for much of the year, including the colder and wetter months here in the PNW. The leaves are best before they go into flower.
Permaculture Uses: It serves as a good ground cover after it’s second year and is an incredibly resilient plant for all types of weather extremes.
