发明详述
传统地,在通过焙烧(roasting)处理粉碎的(crushed)花生的过程中产生油香,其中认为Maillard反应是主要机制。
不受理论的限制,提出本文提供的方法的有益效果是由于Maillard反应的前体(例如葡萄糖)释放于酶处理的花生原料中,且在随后的加热过程中,Maillard反应产生增加量的芳香化合物。本文提供的方法改进了花生油的味道和/或颜色。然而,本文提供的方法的适用范围(applicability)不限于花生油,并可用来改进任何花生产品的香气、味道和/或颜色。
因此,本发明涉及用于产生花生产品例如花生油和/或花生酱的方法,其包括用至少一种淀粉分解酶处理花生原料。至少一种淀粉分解酶优选为葡糖淀粉酶或α-淀粉酶或两者。在另一个优选实施方案中,除了至少一种淀粉分解酶之外,可将花生原料用选自下组的酶进一步处理:纤维素酶、蛋白酶、木聚糖酶和果胶酶。

在第一方面的酶处理后(例如在上述特别优选的实施方案中的步骤(a)之后和步骤(b)之前、之中和/或之后),可以将花生原料和/或花生油加热至足够高的温度范围,使Maillard反应能够发生,优选110℃至250℃,更优选120℃至240℃,最优选130℃至230℃,如约140℃至约220℃。然而,可认为理想的是,在本发明的方法中不诱导芳香Maillard产物的完全形成,因为之后可能产生花生产品(例如花生油),其仅当由消费者加热后才展现(develop)它完全的香气。

在本发明的方法中,可以使用任何酶,其在适当的pH和温度范围内具有合适的酶活。在优选实施方案中,酶在约3至约10的范围内具有最适pH。在更优选的实施方案中,酶在约4.5至约8.5的范围内具有最适pH。
在另一个优选实施方案中,酶的最适温度在约0℃至约110℃的范围内,更优选在20℃至100℃的范围内,和最优选在50℃至80℃的范围内。

α-淀粉酶活性(KNU)

实施例1

实施例2
将花生粉碎成平均粒度10目至20目的粗粉。向8kg花生粉样品中加入720ml水和80ml葡糖淀粉酶组合物。将混合物在50℃温育4小时。将花生粉在220℃干燥20分钟,并用水力挤压以产生油。通过同样的步骤处理无葡糖淀粉酶的空白样品。

Claims (11)
1.产生花生产品的方法,其包括用至少一种淀粉分解酶处理花生原料。
2.前述权利要求的方法,其中花生产品是花生油,所述过程包含步骤:
a.用至少一种淀粉分解酶处理花生原料,和,
b.压榨和/或提取经处理的花生原料以产生花生油。
3.前述权利要求的方法,其中至少一种淀粉分解酶是葡糖淀粉酶和/或α-淀粉酶。
4.前述权利要求中任一项的方法,其还包括用选自下组的酶处理花生原料:纤维素酶、蛋白酶、木聚糖酶和果胶酶。
5.前述权利要求中任一项的方法,其还包括在酶处理之前和/或过程中,将花生原料加热至至少70℃,优选至少80℃,更优选至少90℃,和最优选大约100℃的温度。
6.前述权利要求中任一项的方法,其还包括在酶处理之后(例如,在步骤(b)之前、过程中和/或之后),将花生原料和/或花生油加热至足够高的温度,使Maillard反应能够发生。
7.前述权利要求中任一项的方法,其中花生原料是花生粉,优选粒度为5目至30目的花生粉。
8.前述权利要求中任一项的方法,其中步骤(b)包括对花生原料施加机械和/或水力挤压,以获得花生油。
9.前述权利要求中任一项的方法,其中步骤(b)包括用非极性溶剂、醇和/或水提取花生原料,以获得花生油。
10.用权利要求1和权利要求3至9的方法可获得的花生产品。
11.用权利要求2至9的方法可获得的花生油。
