Abstract
本发明公开了一种富硒山药杂粮固体饮料及其制备方法,由富硒山药全粉、富硒红小豆、富硒玉米、富硒黑豆、富硒黑花生、富硒红衣米花生和魔芋精粉按照质量比制备而成,首先对原料进行初步预选处理再进行漂洗除杂和浸泡,上料到夹层锅进行熬煮,加入清水,继续胶体磨磨浆,过滤去渣,在滤后的乳状浆液中按比例加入魔芋精粉,利用高压均质机将料液均质,然后进行喷雾干燥,最后进行冷却和无菌密封包装。本发明饮品中富含硒,为人体提供丰富的硒元素,能健脾益胃助消化,滋肾益精,降低血糖,延年益寿,有利于预防慢性病,提高人体免疫力。

技术领域
本发明涉及饮品制备技术领域,具体是一种富硒山药杂粮固体饮料及其制备方法。
背景技术
硒是生物体所必需的微量元素,人体内无法合成,人体本身的硒总含量为6-20mg。硒遍布各组织器官和体液,肾中浓度最高。男性体内的硒多集中在睾丸及前列腺输精管中,会随精液一起排出体外。由于人体内不存在长期贮藏硒的器官,机体所需的硒应该不断从饮食中得到足量的硒补充,硒浓度的平衡对许多器官、组织的生理功能有着重要的保护作用和促进作用。当硒缺乏时,很容易导致人体免疫能力下降,威胁人类健康和生命的四十多种疾病都与人体缺硒有关,如癌症、心血管病、肝病、白内障、胰脏疾病、糖尿病、生殖系统疾病等。
目前市场上,饮料的品种可谓多种多样,其功能也不尽相同。同时市场上供应的富硒商品也很多,但大多属于高档商品,不但价格高,而且硒含量相对不是很高,因此适用人群不普遍。对于饮品中含有硒的饮料更是较少,因此为了弥补市场的不足,现提供一种通过山药等杂粮制备的富含硒的饮料。
发明内容
本发明的目的在于提供一种富硒山药杂粮固体饮料及其制备方法,以解决上述背景技术中提出的问题。
为实现上述目的,本发明提供如下技术方案:
一种富硒山药杂粮固体饮料,由以下质量比的原材料制备而成:富硒山药全粉25~35%,富硒红小豆7.5~12.5%,富硒玉米15~25%,富硒黑豆15~25%,富硒黑花生10~20%,富硒红衣米花生10~20%,魔芋精粉0.5~1.0%。
一种富硒山药杂粮固体饮料的制备方法,具体制备步骤如下:
(1)原料初处理:精选无虫、无杂质、无霉变、无瘪粒的红小豆、玉米、黑豆、黑花生、红衣米花生原料,清洗干净,魔芋精粉选择特级精粉;
(2)熟制:按配比要求分别称取红小豆、黑豆、玉米、黑花生和红衣米花生,加入热水并进行漂洗除杂和浸泡,再上料到夹层锅进行熬煮;
(3)磨浆:将熬煮后的混合物料,加入一定比例的山药粉,再按原料质量比1:10的比例加入清水,搅拌均匀,经过胶体磨磨浆,然后过120目的筛网,去渣取乳状料液;
(4)添加魔芋精粉:在乳状料液中按比例加入魔芋精粉,并充分搅拌;
(5)均质:利用高压均质机将料液均质1~2次,均质压力20MPa~25MPa;
(6)喷雾干燥:常温泵入料液,进行喷雾干燥,蠕动泵转速设定为25~50r/min,进风温度为180℃~200℃,出粉后立即冷却;
(7)包装:冷却后在无菌条件下密封包装。
与现有技术相比,本发明的有益效果是:本发明饮品中硒含量≥50ug/100g,能够为人体提供丰富的硒元素,能健脾益胃助消化,滋肾益精,降低血糖,延年益寿,有利于预防相关慢性病的发生;豆类食品中富含蛋白质、氨基酸和维生素B等,具有抗癌的作用,常吃可预防肿瘤病变;维生素A有助于人体内细胞分裂,预防癌细胞形成,并可帮助免疫系统反应,制造抗生素;丰富的膳食纤维,可缩短废物在肠道中停留的时间、以减少致癌物质和肠道黏膜的几率,有利于防止便秘和结肠癌的产生。

实施例1
一种富硒山药杂粮固体饮料,由以下重量的原材料制备而成:富硒山药全粉25g,富硒红小豆7.5g,富硒玉米25g,富硒黑豆15g,富硒黑花生10g,富硒红衣米花生17g,魔芋精粉0.5g。
实施例2
一种富硒山药杂粮固体饮料,由以下重量比的原材料制备而成:富硒山药全粉30g,富硒红小豆10g,富硒玉米20g,富硒黑豆15g,富硒黑花生10g,富硒红衣米花生14g,魔芋精粉1g。
实施例3
一种富硒山药杂粮固体饮料,由以下重量比的原材料制备而成:富硒山药全粉35g,富硒红小豆9g,富硒玉米15g,富硒黑豆20g,富硒黑花生10g,富硒红衣米花生10g,魔芋精粉1g。
本发明的原料中硒的含量如下
富硒山药全粉中的硒含量≥0.5mg/kg;
富硒红小豆中的硒含量≥1.0mg/kg;
富硒玉米中的硒含量≥0.2mg/kg;
富硒黑豆中的硒含量≥1.0mg/kg;
富硒黑花生中的硒含量≥0.5mg/kg;
富硒红衣米花生中的硒含量≥0.5mg/kg;
上述富硒山药杂粮固体饮料的制备方法,具体制备步骤如下:
(1)原料初处理:精选无虫、无杂质、无霉变、无瘪粒的红小豆、玉米、黑豆、黑花生、红衣米花生原料,清洗干净,魔芋精粉选择特级精粉;
(2)熟制:按配比要求分别称取红小豆、黑豆、玉米、黑花生和红衣米花生,加入热水并进行漂洗除杂和浸泡,再上料到夹层锅进行熬煮;
(3)磨浆:将熬煮后的混合物料,加入称取好的山药粉,再按原料质量比1:10的比例加入清水,搅拌均匀,经过胶体磨磨浆,然后过120目的筛网,去渣取乳状料液;
(4)添加魔芋精粉:在乳状料液中按比例加入魔芋精粉,并充分搅拌;
(5)均质:利用高压均质机将料液均质2次,均质压力为20Mpa;
(6)喷雾干燥:常温泵入料液,进行喷雾干燥,蠕动泵转速设定为45r/min,进风温度为180℃~200℃,出粉后立即冷却;
(7)包装:冷却后在无菌条件下密封包装。
饮品中的五谷杂粮是最好的基础食物,有利于预防相关慢性病的发生;豆类食品中富含蛋白质、氨基酸和维生素B等,具有抗癌的作用,常吃可预防肿瘤病变;维生素A有助于人体内细胞分裂,预防癌细胞形成,并可帮助免疫系统反应,制造抗生素;丰富的膳食纤维,可缩短废物在肠道中停留的时间、以减少致癌物质和肠道黏膜的几率,有利于防止便秘和结肠癌的产生。

Claims (2)
1.一种富硒山药杂粮固体饮料,其特征在于,由以下重量比的原材料制备而成:富硒山药全粉25~35%,富硒红小豆7.5~12.5%,富硒玉米15~25%,富硒黑豆15~25%,富硒黑花生10~20%,富硒红衣米花生10~20%,魔芋精粉0.5~1.0%。
2.一种如权利要求1所述的富硒山药杂粮固体饮料的制备方法,其特征在于,具体制备步骤如下:
(1)原料初处理:精选无虫、无杂质、无霉变、无瘪粒的红小豆、玉米、黑豆、黑花生、红衣米花生原料,清洗干净,魔芋精粉选择特级精粉;
(2)熟制:按配比要求分别称取红小豆、黑豆、玉米、黑花生和红衣米花生,加入热水并进行漂洗除杂和浸泡,再上料到夹层锅进行熬煮;
(3)磨浆:将熬煮后的混合物料,加入一定比例的山药粉,再按原料质量比1:10的比例加入清水,搅拌均匀,经过胶体磨磨浆,然后过120目的筛网,去渣取乳状料液;
(4)添加魔芋精粉:在去渣取乳状料液中按比例加入魔芋精粉,并充分搅拌;
(5)均质:利用高压均质机将料液混合均质1~2次,均质压力为20Mpa;
(6)喷雾干燥:常温泵入料液,进行喷雾干燥,蠕动泵转速设定为20~50r/min,进风温度为180℃~200℃,出粉后立即冷却;
(7)包装:冷却后在无菌条件下密封包装。
