SHELVING FOR CURING AND STORING CHEESE.

Specification of Letters Patent No. 18,702, dated November 24:, 1857.

1'0 all whom it may concern:

Be it known that I, JEREMIAH H. PHIL- LIPS, of the township of Colebrook, in the county of Ashtabula and State of Ohio, have invented a new and Improved Mode of Constructing Shelves for the Storing and Curing of Cheese; and I do hereby declare that the following is a full and exact description thereof, reference being had to the accompanying drawings and to the letters of reference marked thereon.

The nature of my invention consists in rabbeting the upper anterior edge of each shelf upon which the cheese is placed for storage or curing, and in constructing the said shelves in double or single tiers with the frame work of each tier fastened (at a proper distance apart) firmly to the floor below and above, so that the shelves of one tier will always be parallel to, and on the same plane with the shelves of its contiguous tier; said shelves to be always of sufficient thickness, and the said rabbeting, of the same, of sufficient depth, to firmly and securely receive the rabbeted or beveled ends of a short movable shelf, made to rest in the rabbetings of any two parallel shelves in the same plane and freely slide along said cheese-shelves, in the said rabbetings, crosswise the aisle, or space, between said tiers of shelves, from one end to the other thereof; the said short movable shelves to be of sufficient thickness for the required strength, and the rabbeting or beveling of its ends to be always of suflicient depth to make the upper surface of the short movable shelves flush with the same surface of the fixed cheese-shelves. And to enable others acquainted with the business of cheese making, curing, or storing, to make and use my invention, I will proceed to describe its construction and operation.

I construct my shelves upon which the cheese is placed for curing or storage in double, or single tiers, from near the floor of my building up to near the floor overhead, or so many shelves one above the other as necessary to hold the quantity of cheese required to be stored or cured. These tiers of shelves I fasten firmly above and below and at such a distance apart as to leave sufficient room for the operator to work, pass and repass with freedom and ease between them; and also make the shelves of each respective tier, parallel, and in the same plane of the shelves of its contiguous tier, as shown in Figure 1 of the drawings hereto attached; which said Fig. l is a draft representing two double tiers of cheese-shelves, with cheese thereon, and the aisle or space between said tiers, with said short, movable shelves crosswise said aisle; so that any given shelf in tier A will have in its contiguous tier B a shelf on the same plane and parallel with it. ,The upper, anterior, edge of each cheese shelf is rabbeted from one end to the other thereof, to a sufficient depth to receive firmly and securely the rabbeted or beveled ends of a short movable shelf made to rest on and in this rabbeting of, the anterior edge of the fixed cheese-shelves, with further suflici'ent room, to allow said short movable shelves, to freely slide along in the aforesaid rabbeting of the fixed shelves from one end to the other thereof. The object of this short movable shelf, a representation of which is seen in Fig. 2 hereto attached, placed thus on a plane with the upper surface of the cheese shelves upon which it rests, is to have always at wish a convenient table or platform opposite to, and on the same plane with, any given cheese, upon which said platform the said cheese can be easily slid and turned without the necessity of lifting the same: and which said short shelf as a platform upon which to turn the cheese accommodates itself by being placed in the rabbeting of the higher or lower shelves, to cheese placed on said shelves at any height from the floor of the building. And when used on such shelves as are too high, to enable the operator with ease to stand upon the floor and turn cheese upon said short shelf, a second short movable shelf, as shown in Fig. 1, is placed upon such lower shelves as will bring the operator, standing upon such second short shelf, to the height required, which said last mentioned short shelf is easily adjusted by the operator to any required point, by resting his weight for the moment upon the other shelves and moving this second short shelf with his feet.
